I used to get up early enough (before the jet lag wore off) to walk past dead pigs waiting to be butchered in the morning. The wet markets are fascinating here. They receive a fresh dead pig in the morning, butcher it and hang the meat up on hooks all day for sale (no refrigeration). The idea is that the meat is so fresh it doesn't spoil. And they sell every part of the animal, from the foot to the tail or the face. I've been trying to get good photos for a while now.
