We could have easily spent a week at Arches, but we managed to go 3 times while in Moab. We had to be strategic since it was so hot (and Arches now requires timed entry before 5pm) and get there early or late- which we did! Many of the hikes are short and kid-friendly and there's just so many arches everywhere. It was just as beautiful as I remembered from when Adam I went before we were married.
